Arugula Salad with Shaved Parmesan

Sometimes salads can get a little boring, especially if you're in a rut with opening up a bag of prewashed greens and pouring on the bottled dressing. 

I wanted to add some variety to my salad bowl, and the Taste of Home Farm to Table Cookbook had just what I was looking for, with its arugula salad with shaved parmesan recipe. I was not able to find golden raisins during a quick trip to my favorite grocery store. Instead, I substituted dried cherries, the perfect complement to the toasted almonds.

Ingredients:

  • 6 cups fresh arugula
  • 1/4 cup golden raisins (or any dried fruit -- I substituted dried cherries)
  • 1/4 cup sliced almonds, toasted
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 1/3 cup shaved or shredded Parmesan cheese

Directions:

  1. In a large bowl, combine the arugula, raisins and almonds. 
  2. Drizzle with oil and lemon juice. Sprinkle with salt and pepper; toss to coat. 
  3. Divide salad among four plates; top with cheese.
