Slow Cooker Chicken Fajitas

 

Fajita ingredients are typically prepared in a sizzling skillet. So, when I ran across a recipe for slow cooker chicken fajitas, I wasn’t sure quite what to expect. It turns out the fajitas from Rustic Farmhouse Slow Cooker, by Alli Kelley, were loaded with flavor thanks to lime juice and spices – even though the peppers and onions weren’t charred by a hot skillet.

Of course, a big advantage of this recipe is that all of the preparation can be done several hours before dinnertime. Then you can allow the fajita filling to cook away until you’re ready to eat!

Ingredients:

  • 3 chicken breasts, sliced into bite-size pieces
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced (I used a selection of red, yellow and orange bell peppers)
  • 1 red onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1/2 tablespoon cumin
  • 1 teaspoon salt
  • 1/4 cup lime juice
  • 1 cup chicken broth
  • Small tortillas
  • Toppings, such as: fresh cilantro, cheddar cheese, and sour cream

Directions:

  1. Combine the chicken breasts, bell peppers, onion, garlic, chili powder, cumin, salt, lime juice and chicken broth in the slow cooker. Stir gently until everything is coated in the spices.
  2. Cook on high for three hours or on low for six hours. Serve on tortillas with cilantro, cheese, or any other of your favorite toppings.
