When I think of citrus fruits, limes usually are the last to come to mind — unless I’m in the mood for a margarita! But the February issue of Prevention magazine reminds us that limes are a healthy and zesty way to perk up our meals this time of year.

According to registered dietician and nutritionist Kory DeAngelo, limes contain antioxidants like Vitamin C, and could help prevent inflammation. Plus, citrus scents can help elevate your mood.
I enjoyed Prevention’s Powerful Protein Bowl for lunch recently. The lime juice added the perfect punch of flavor to the brown rice, black bean and shredded cabbage base, to which I added avocado, jarred salsa and fresh cilantro. It was just what I needed to add some bright flavor to these bitterly cold winter days!
Ingredients:
- 1 cup quinoa or brown rice
- 1/2 cup cooked black beans
- 1/2 cup shredded red cabbage
- 1/2 avocado, cubed
- 1 lime, juiced
Directions:
- Combine all ingredients and top with salsa, if you’d like.
