Pizza Frittata

 

Who doesn’t love pizza? My family is always up for pizza, whether grilled, baked in the oven, or ordered from a local restaurant. But I never would have thought of pizza in the form of a frittata.

Cookbook author Kristin Cavallari convinced me to try her pizza frittata recipe, featured in True Comfort: More Than 100 Cozy Recipes Free of Gluten and Refined Sugar. She says she likes frittatas for their simplicity, taking “just a few minutes to whip up in the morning before everyone can go off to work and school feeling satisfied.” Well, these days many of us are staying in our pajamas while we log onto our computers for work and school, but we still deserve some “True Comfort” in the form of a filling and delicious breakfast! And with this pizza frittata, leftovers can be microwaved for lunch, even if we’re still in our pj’s!

I followed Cavallari’s recipe with one exception — instead of running to the store for pepperoni, I used a link of precooked Italian chicken sausage, cut into thin slices. 

Ingredients: 

  • 6 eggs
  • 1 tablespoon almond milk
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • Pink Himalayan salt
  • Freshly ground black pepper
  • 1 tablespoon extra-virgin olive oil
  • 1 large heirloom tomato, thinly sliced
  • 8 slices uncured pepperoni
  • 1 cup fresh basil leaves

Directions: 

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. In a medium mixing bowl, whisk together the eggs, almond milk, oregano, garlic powder, and a pinch each of salt and pepper.
  3. Heat the olive oil in a medium cast-iron or other oven-safe skillet pan over medium heat. Pour the egg mixture into the skillet. Once the edges start to cook, remove the skillet from the heat and layer the tomato slices, pepperoni, and basil leaves over the eggs.
  4. Bake in the oven until the center is set, 20 to 25 minutes. Let the frittata cool slightly before slicing it. Leftovers can be saved in an airtight container in the fridge for a couple of days.
